Last night on the Galley Table, our Captain challenged us to come up with new topics to write about here on our site. One of the things that he came up with, and I think it was kind of a joke, but heck you don’t joke around me and expect not to have it bite you (I am a pirate), was recipes.

Well Today I bring you an awesome one.

When I think of Egg Salad I think of those Car trips when I was a kid, it would be about 9:30 in the morning we had been in the car since 5 and my dad would say, “Honey give me a sandwich would you.” The cooler would open and the station wagon would fill with this over whelming smell of egg salad. Just nod if you know what I am talking about.

But I am telling you, that what I am about to share with you, is not that egg salad, it does not even smell the same. It is warm and cheesy and has BACON in it.

Here is the basic Recipe:

Make ahead Muffin Melts

12 whole Hard-boiled Eggs, Peeled And Chopped
2 cups Grated Cheddar Cheese
1 cup (Real) Mayonnaise
12 slices Bacon, Fried And Crumbled
1 Tablespoon (heaping) Dijon Mustard
1/2 teaspoon Garlic Powder
3 dashes Worcestershire Sauce
6 whole English Muffins Split
Preparation Instructions
Combine eggs with all other ingredients. Fold together gently. Cover and store in the fridge overnight.
Spread on English muffin halves, then broil for 3 to 5 minutes or until hot and bubbly. (Don’t set them too close to the heating element.)
Serve immediately!
